I will be referring to the game they came from.
SNES: They all are bad, but if you forced me to pick one it would have to be Mario Circuits 2, 3 and 4, Rainbow Road is horrible and overrated asf (pretty much just MC3, DP3, BC2 and GV3 layout but straight and thin.
N64: Not a fan of these courses because either the layout is bad, long or the track is bland. Koopa Troopa Beach is the best one by a long way. Choco Mountain, royal raceway and mario's raceway next. (But rms are better)
GBA: MKSC may have been flat but had some decent layouts. Riverside and Lakeside Parks are good and somehow haven't been remade. But my favourite is Sky Garden mainly because the music.
GCN: Not baby park. Best tracks in this game imo was Rainbow Road, bowser castle and Yoshi Circuit. Also I like sherbet land, its not great but its definitely not the worst in the game.
DS:
Nitro: Pretty much Star Cup, I also like Cheep Cheep Beach but rm is better. Waluigi Pinball is above average but overrated asf and if you wanna hear me rant why just ask.
Retro: they all suck, if I had to choose it would be Sky Garden again
Wii:
Nitro: Most tracks honestly, but mainly Koopa Cape, Maple Treeway, Grumble Volcano, Coconut Mall, Toads Factory and all of Special Cup
Retro: GBA Bowser Castle 3
3DS:
Nitro: they are underwhelming, if I had to choose it would be Music Park/Melody Motorway, Piranha Plant Slide/Pipeway (unless ur Nate), and Rainbow Road (but I see why people dont like this one)
Retro: DS Airship Fortress and DK Pass, the Wii remakes were ruined except Coconut Mall
WiiU/Switch:
Nitro: again underwhelming, Ruinas Roca Picuda, Shy Guy Falls (only track that used anti gravity well) and Mount Wario are good
Retro: All of Lightning Cup, n64 royal raceway, ds cheep cheep beach
DLC: gcn Yoshi Circuit, both FZ0 tracks, Hyrule Circuit and gba Cheese Land, gba ribbon road was creative but the wavy part was annoying

my all-time favorite is WiiU/Switch Sunshine Airport! (I also love mk8 and mkwii Bowser's Castles, GBA ribbon road mk8 remake and original airship fortress.) P.S. I am not a fan of Waluigi Pinball (both DS and 3DS)

SNES : All of them are shitty but I will say Mario Circuit 2 due to the jump who are the only funny thing in this game. Rainbow Road is TRULY overrated and music breaks your ears.
N64 : All of them sucks your ass except some ones, I will say Yoshi Valley and Koopa Troopa Beach.

I am really conflicted between GCN Yoshi Circuit and GCN Wario Coliseum, because GCN Wario Coliseum is memorable for it's unique lap count, while GCN Yoshi Circuit is memorable for being actually in the shape of Yoshi.

I'll put each of my favorite tracks from each of the 8 mainline MK games, reasons are also included (this does not include MKT and the Arcade games):
SNES = Rainbow Road. This is like the best SNES track ever. Yeah, it's been remade four times by Nintendo, but I think it's the best SNES track due to how challenging it is and also since it's easy to navigate once you get used to it. The 3DS + Wii U / Switch versions are probably the best of it btw.
N64 = Kalimari Desert. Probably my favorite desert track in the series. The idea of having a train crush everyone if they don't wait is really funny, and the music fits its wild west vibe perfectly.
GBA = Sky Garden. Another one that's kinda overrated. What makes me really enjoy this one is also its challenging-like atmosphere. The music also makes it feel like you're on a soaring journey, and slaps really hard (especially the DS and Switch versions of the music).
GCN = Mushroom City. All of the GCN tracks are extremely good that it was so hard to pick one that was my favorite. I went with Mushroom City since its way of traveling everywhere is unique due to the amount of turns, similar to Yoshi Valley. However what makes me like it even more is how easily it can possibly fool you if you're not careful, because there's an opening where there's visible traffic (which you may think'll bring you into last place if you fall) that actually makes Lakitu pick you up.
DS = Tick-Tock Clock. Another difficult to choose one, about the same choosing difficulty as Double Dash was. However, out of all of the DS tracks, I gotta say I love Tick-Tock Clock the most. IK it's based on the SM64 level, but this track makes it really feel like you're inside a clock, especially the MK8 remake of it. The design, music, and moving parts really spread that "clock" feeling.
Wii = Rainbow Road. Yeah, another overrated one. However, out of all the Wii tracks, I gotta love its Rainbow Road since it's based off of Super Mario Galaxy (which I've watched my older brother play a few years ago). It's also even more challenging than SNES Rainbow Road is, and the music is also fantabulous (best Rainbow Road theme ever). The challenges this track gives off also makes it stand out from the other Wii tracks to me.
3DS = Maka Wuhu. Of course, the Wuhu island tracks on the 3DS are definitely some of the best in the series. Maka Wuhu just feels more like you're on a journey than Wuhu Loop though (they're BOTH really good though), and the fact that you also go through a small castle on this one is cool too.
Wii U / Switch = Electrodrome. Oh my god I feel like I'm in heaven right now. I love that this course makes you feel like you're at a DJ dance party. The design of literally everything, as well as the music, make this course feel so vibrant. In fact, the music even changes depending on where you are, and you can even hear the crowd of minions and also the Shy Guy DJ based on your location!!!
