Mine are two: The disco dance from Origami King. The only time I ever wanted to dance because of video game music. Seeing Paper Mario dance was so adorable (for some reason) and satisfying.

I'd have to say when I beat Big Massif in Mario & Luigi: Dream Team. I had been stuck on that part, stopped playing the game, but when I came back, after some grinding, I beat the Zests, as well as him. I was able to advance even further into the game, and had fun doing so. It just felt like entire rest of Pi'illo Island had opened up.

I had been stuck on that part, stopped playing the game, but when I came back, after some grinding, I beat the Zests, as well as him. I was able to advance even further into the game, and had fun doing so. It just felt like entire rest of Pi'illo Island had opened up.
I still need to beat that game..

I'm planning in the future to get the Superstar Saga remake and the original Bowser's Inside Story. (The remake is pretty bad, I've always heard the original is the best way to play it.)
