Here's my advice:

In all seriousness, just because YOU aren't good at the tracks doesn't mean they should be banned. That doesn't make sense. Because there are people who are GOOD at those tracks, as well as people who generally like the SNES Bowser Castle tracks.
If you aren't good at them, practice.
It's the logical thing to do.

Yes I do, actually.
Just slow down, and get a better feel for Bowser Castles 1 and 2. Once you learn the tracks better, you can start drifting on it.
For 3 though, it's really different.
At the part with all the jumps, don't trick. You're pretty much guaranteed to fall off. take the left-most path without tricking, and you should be fine. Also remember there are no walls, so you can just get to the Boost panel on 3 without having to choose the correct lane.

In BC 2 there is a shortcut thanks to no walls, on the final turn jump off the entire map and the lap counts. Not having walls can also result in gap cuts so use it to your advantage.

Well, something I do is do stunts in the first jump, then in the others I avoid doing them so as not to gain more speed and fall and thus be able to take the circuit's curves well.
In the meantime to wait that they fix it as well as on the rainbow road of gba fix the jumps.

aside i think they should also improve a little bit, the ds rainbow path is too small or they should also improve the gameplay when they cross the water i don't know about you guys but the water slows down too much

Now, I mean no offense when I say this, but maybe, just maybe, you're complaining about your own skill level here? The tracks in question are the ones deliberately made to be difficult. To test you. And if you're complaining about them being too hard, you've clearly failed that test. Keep playing them, get better at them, maybe use characters with better handling to give yourself an easier time. But every complaint I see about the game is its difficulty, and that's the point. This game is filled with little kids who aren't that good at MK, so why not make tracks that force them to improve at the series in general?
