8's easily better, really fits with the whole MKTV theme the game was going for.
Double Dash's is nice, but it's too similar to Pinna Park, so it's objectively bad.

I prefer DD, it has that specific gamecube feel to it.

Double Dash!!'s results theme is good! It is also Toadette's ending theme in MKPC
It makes sense that it's her victory theme, as she was introduced in DD.

I honestly think the MKWii winning theme is at number 6 out of the 9 Mario Kart games.
The SNES ones are at 3/9

I really like DD's, but I prefer 8, fight me. Maybe it's too generic, but it is also somewhat happy and modern, more realistic. Tbh comparing the ending themes is like comparing the games. One is jazzy, fun, unrealistic, all over the place, and a big mess, one is a modern but fun theme. Plus it has a value of nostalgia since it reminds me one of the best moment of my life after one of the worst. Wii is also very good and it has that same value. The only flaw 8 has is the fact that it's hard to differentiate the sad one from the happy one (the sad one isn't that sad) I didn't like N64's one at all, that's also something I wanted to mention.

64 results theme is good, especially for its console. MK7's theme is just a HD version of 64 so it fits the rest of the soundtrack (although 64 is still slightly better)
