A water based Vanilla Lake theme would be pretty cool, the only problem here is that the ice here is too straight. Otherwise nice idea.

Koopa Beach 2 would be awesome to make pieces for quick mode

I agree. Vanilla Lake Water would be very nice, and Koopa Beach 2 could have it's crossing based on the water section of that course.
