GBA Sky Garden is a good track with a lot of shortcuts
DS Delfino is a great track with a lot of shortcuts too
DS Peach Gardens is a good track that looks nice
DS Waluigi Pinball is very fun and unique
GBA Ribbon Road is pretty fun with some off-road cuts
Same thing with GBA Luigi Circuit but with bigger cuts!

What I always do to make a character:
1. Right click one of the characters' select icon, map icon, and podium art, click "save image as", and save
2. Get the art software you'll use (I use ibis Paint)
3. Open all the parts of the character in said art software and draw on them however you want
4. Find a Youtube video with fitting music for their win theme
5. Go to the character select, custom characters, character creator
6. Input all the different parts, post the character, and...
Done!

I think the biggest one is the Riverside Park one where you mushroom into the lake and skip a lot of the track
