It's called Reverse Drift, also known as RD. Drift normally and then press the brakes. I recommend practicing on Figure 8 Circuit.

My quick explanation:
To reverse drift, you press brake instead of go, and turn in the opposite direction. This then makes you do an EXTREMELY sharp turn. The pro players will start a normal drift, and then alternate between normal and reverse drifting to have more control over how sharp they're turning and in turn get better times in time trials.

Actually, if you press A (accelerate) and B (deaccelerate) at the same time, you reverse drift and can easily alterate between reverse and regular turning.
