Personally, I thought of some sort of "team" feature, where you could create or join a team with their own chat, invite other teams to battle or race and a team leaderboard for each gamemode. I'm not asking for this to be a feature, I just thought it would be cool.

This happened to me too, if you change the player count then you can no longer select 1 player vs mode.

Not really, how would that work ? Couldn't that be messy ? And hard ? Wouldn't it lack accessibility ? Very bad idea

Select your body
Select your arms
Select your legs
...and those would be taken from different parts of in-game character models.
Imagine hopping onto an online game and seeing this:

I'm pretty sure that on some other topic someone asked for gliders. The general response was that this game is supposed to be like classic Mario Kart, and so it would ruin the aesthetic.
