I know this may sound weird but I'd actually recommend snake, either steamed or in a soup. It tastes kinda like a mixture of fish and chicken, overall really nice tbh
Also would recommend guriltal shul which is a Mongolian noodle dish of vegetables, noodles (typically egg or rice noodles) and fried meat (for me pork and goat are the best)
Some drinks I'd suggest are jasmine tea and airag (basically heated alcoholic mare's milk, again Mongolian thing - but I wouldn't seriously recommend it unless you actually want to get drunk)
Also this may just be me speaking as someone who eats a wide range of foods but damn are you Westerners missing out
