Around 1000x1000px and 600x600px, my Tracks are usually short, so if you want bigger Tracks, I recommend 1000x1000px or higher.

As much as I'm not any of the three people you said, I kinda know how Max makes his Tracks (mostly because I made QM pieces of two of his Tracks trying to replicate the style). A thing I've seen was the usage of patterns for different stuff, like something made of bricks having brick pattern, grass having some "random" darker green pixels and water being wavy

Super Mario Land 2: 6 Golden Coins, because it's also not talked much and has, for me, the biggest variety of a Mario game, there's literally enemies that appear in only one stage the entire game

A backwards version of every Track that changes some colors of it and changes the obstacles' places.
For example, a Track normally is in daytime, it's backwards version could put it at night

In the Tracks Topic, I would like if Nintendo made 5 nitro cups and 5 retro cups, something like GBA. (And maybe 4 cups of a mix between nitros and retros as DLC)

And for special gimmick, something like "in the last lap of every Track, something different happens", the GBA Lakeside Park gimmick as if every Track had it
