Here's a few ideas you could use :
Rocky Wasteland : A track that ressembles Sunset Wilds, with a desert-like environment, and a track that includes some caverns. You could also create a canyon (black void or very dark colors) where the only way to continue the race would be driving on a bridge. Some mud and some Shy Guy tents could be added anywhere you want.
Spidersnake Swamp : A dark swamp where everything is scary. Some Luigi Mansion trees could be added (not the mobile ones). If you're okay with creating decors, try to create
a spider decor and a snake decor. The water would be very dark and the bridges (if there are bridges) as well. Try to combine two environments : the jungle/swamp/forest environment and the ghost environment.
Subway Shops : This one's gonna be peculiar. You'll have the permission to explore a subway, but the subway's not ordinary. that's not just a place where the train comes and go. There's a lot of shops and the place can get busy, because people move with cars. A very exciting yet challenging race.
Flooded Caverns : Do whatever you want. You just need to make the ambiance there could be in flooded caverns. You could use my track Cascade Caverns as an example.
