SNES - they all suck. Rainbow Road is the least worst but it's not the greatest track ever. It doesn't deserve to be included in every single Mario Kart game.
N64 - Bowser's Castle.
GBA - Sky Garden.
GCN - either Mushroom City or DK Mountain.
DS - either Waluigi Pinball or Airship Fortress. The former is good except for the actual pinball section in which you drive straight and try not to get hit by pinballs. The latter is good except for the really long turn after the cannon.
Wii - Maple Treeway.
3DS - either Wuhu Loop/Maka Wuhu, Rock Rock Mountain, Pirahna Plant Slide, or Neo Bowser City. Rainbow Road is good but it's not the best track ever.
8DX - either Mount Wario or Big Blue.
