Since I cannot find good MIDIs of the ones below I decided to make some myself. I ripped them from MKSC and MKDS except Choco Mountain (had to resequence because the MKDS MIDI was crap).
Desert Hills: The MIDI everyone uses is literal garbage. I mean it’s good for a remix but it’s extremely inaccurate.
Shroom Ridge: Nobody made one. Someone uploaded the ripped MIDI file.
Choco Mountain: The MIDI everyone uses is missing some elements and sounds wrong.
Lakeside Park: Nobody made one.

i do music production myself and i love resequencing stuff! glad to see someone else here do this. 
i found a couple errors in a few midis, such as very minor background lead mistakes in the desert hills one. ill get back to you on this

The Desert Hills MIDI is actually outdated. The strings you hear are the wrong instrument. Those were changed to maracas.

They are basically editable music files. You can apply soundfonts over them to make them sound any way you like. Like you can apply the Super Mario Kart soundfont and they will sound like a track from the game (kind of).

That was the only track I could not find a good MIDI for actually. So I pieced one together myself.

Yup! MIDIJam! I use that program so the videos are not so boring to watch. However, many instruments (such as plucks like a banjo or koto, as well as others like a shanai) are not visible.

Thing is I ripped them from the game and changed the instruments and use SynthFont to generate the drums. BUT I do make other video game songs by ear!
