The main reason I hadn't added this possibility is that on many laptops (included mine), you can't press more than 3 keys at a time. So if you are moving (key ↑), turning (key ←) and using an item (spacebar), you can't press another key (it will be ignored...).
I might have a solution, but I don't know if it would be ok for you : the X key. This key is used to look back, so it would be kind of logical to use it to send items backwards too. I could make a mechanic so that if you are looking back and you throw an item, it sends it back.
That's the best compromise I thought of, and it's actually not that bad! I created a test version with this mechanics here: https://mkpc.malahieude.net/mariokart2.php.

On aurait trois touches différentes :
Vue Arrière :
Cette touche permet d'alterner entre la vue normale et la vue arrière.
Quand la vue arrière est activé, appuyez sur
ou 
pour lancer un objet en arrière.
Lancer Arrière :
Cette touche permet de lancer un objet en arrière peu importe la vue activée.
Visée Rapide :
Cette touche permet de viser puis de tirer en arrière en un clin d’œil.
Si vous êtes en vue normale, l'appuie de la touche active la vue arrière.
Si vous êtes en vue arrière, l'appuie de la touche active la vue avant et si vous avez un objet de lancer, le lance en arrière.
Cette touche permet donc, en seulement deux clics sur une même touche, de viser puis de lancer en arrière.

What changed:
- Removed the mechanics with X key, which was just confusing and not very convenient
- Added C key to throw an item backwards (works just like spacebar)
