UPDATE:
N64 Sherbet Land checkpoints fixed. Only a few are these mostly for the misplaced respawn points.

PM44 made a few, such as Wario's Gold Mine and Daisy Cruiser. I also linked other people's track maps to make some like DK Mountain and Grumble Volcano.
