Try hoppingicon's bundle; he/she made all of the nitro tracks in 64, gcn, wii, and 3ds.
For mario kart 8, try m26g's, or there are some tracks that admins made.

How are you supposed to get more than one baloon in battle mode? I always start with one while the cpus start with a bunch.
good question! you just need the press shift. and then comes a balloon the will help you,
