hardest for me is rainbow road it's just so small its hard to play on and bullets are too op in that stage

DS Bowser's Castle. If you don't perform a particular drive that takes a lot of skill and pushes you to the left constantly, you'll be destined to get a low position in the race.

DS Rainbow Road, no question. SNES RR is a close second, but luckily 90 degree turns are easier to make than whatever the heck DS RR decided to pull. In this game it's just stupid because of how small the track is.
As for easiest, well, it's a difficult choice. Depends on whether we're talking to play or to win. To win i find Luigi's Mansion the easiest (all the top players know why), but to play probably Figure 8 Circuit, it's by far the most fair track because you actually have a lot of space compared to the other DS tracks.

As much as I think DS Rainbow Road is really hard, the hardest one is definitely SNES Rainbow Road. Why tho? Because of the higher hixbox respawns compared to DS RR at least from my experience and yes, it's thin like in DS RR but in DS RR, I find the thinness there to be more fun than here and honestly, I enjoy the difficulty of DS RR way more than SNES RR. SNES RR is not bad by any means but I find other Rainbow Roads to be more fun than the SNES one.
As for the easiest track, well I don't really know so I'll list a few of them. F8C like InfiNate explained and I like that that this track is pure skilled outside of blue shells.
GBA Peach Circuit, GBA Mario Circuit and GBA Bowser Castle 1 so that's about it for the hardest and easiest tracks. There is definitely more which I don't have in my mind right now.
Also InfiNate, I don't mind the thinness of the DS tracks that bad at all but it depends on which mode you are looking at. At Time Trials it's not bad and it's actually really fun but on online, I'm neutral with it. Some tracks are good while others is not but the bumps is what made them annoying sadly.

Easiest for me: Ribbon Road, speed pad glitch got fixed.
Hardest for me: Sunset Wilds, everything that can go wrong will go wrong for me on this track.

I've had a lot of trouble with DS Rainbow Road, but DS Bowser's Castle is a bit of a pain. Not too bad, though.
