Yeah, Excitebike Arena is great when you know how to play it (recently beat two friends playing the game for years on this map, whereas I only bought MK8dx a few days ago XD). And for N64 Rainbow Road, you're talking of the 6 F*CKING minutes long one or the 2 minutes long remaster ?
All of these are specifically talking about the Mario Kart 8 versions by the way, it's been so long since a new game (I'm not counting Tour) that this is the only Mario Kart that's on my mind

yeah now that i think about it, DaisyPeachandKeeby68 argument seems valid, since the tour/bcp version of it focuses more on the visual aspect rather than the gameplay aspect (i mean, scs and nh are squares, and shs is a oval (just like gcn baby park) but they look visually amazing)
