I mean, a way to do so would be to just place the checkpoints in order 10 times over and set laps to 9. But that would not change the HUD.

What you need to do is turn right at the first jump to get onto the u-section, then take the jump on the U-section from the side you're on to get to the right bracket. then move to the end of the right bracket, turn left back onto the U, on the opposite side as you were before, then take the jump from that side back onto the Left Bracket.
Tip: Easy on the speed after jumps. Especially the booster ones.

It's a good course. I couldn't help but notice, however, that there was a lack of decor in a lot of places, and the course was made of just solid colors outside of some truck art out of bounds. But it's still a good course nonetheless.
