This is a glitch that is also used in some world records for example lap 3 of SNES Bowser's Castle 2. It is not really a glitch, what is happening is that when you go out of bounds, you respawn at the start of the map, so if you have hit all of the checkpoints, you will get a lap. The reason it happens right when you touch the out of bounds is because the game instantly teleports you to the start, but you don't see it until the respawn animation finishes.

This is a weird track, it took me 3 minutes to complete

Really fun to play, but it is a bit weird that it is in mirror mode. Still, I say it is a 5/5.

What is the "interesting shortcut" that you can't use in the Vanish Daisy challenge? I found a shorcut at the beginning that it lets me do but I can't find any that make me lose the challenge

This one isn't very good because none of the DS presets worked very well
