IMO the boulder is so circular and should me a bit irregular

Basically, the only Mario kart I've played my whole life is MK8DX. So I only know the characters. So I'd get rid of link, Inkling Boy/Girl, Peachette, and PGP (Peachette and PGP R too much like Peach.) (And PGP is kind of creepy.)
