More accurately, a TAS is using an external software that allows you to replay your game frame by frame with the usage of save states. Save states allow you to replay the game at any specific point. TAS runs are actually driven by humans infact

It is actually possible. Get as far as you can, then drive the rest of the lap backwards. Once you reach the point where you couldn't reach, turn back around and you can get a lap count.
